My name is Jessica and I'm a certified Fitness Nutrition Specialist and Personal Trainer. I also have a law degree from Berkeley but that's not why you're here ;) I mention that to share with you that my poor body and I have been through some stressful times indeed. I've spent the past 8 years as a wellness coach, where it's my passion to help others heal from the stressors of our daily lives.
My personal health struggles started in my late teens with an undiagnosed autoimmune condition and progressively worsened through my 20's and early 30's as I battled with chronic joint and muscle pain, overweight, adrenal fatigue, gluten sensitivity and a cornucopia of distressing health issues.
Today, at the age of 40, I can honestly say I have never felt stronger, healthier or more energetic. I spend my free time hiking, riding or climbing up the mountains I only dreamed of during most of my life. There's no magic pill, but I am a huge advocate of intermittent fasting and can attest to the radical changes it has provided for my clients. I literally have the ginger every day. It is one of my favourite flavors generally, and they have done a great job of capturing it, in a gentle way so that it is a soothing and honestly just makes me happy to hold the warm cup and sip away at it. And its delicious even in a cold water mixed with a bit of lemon in the morning, when I don't have fresh ginger to grate or the will to grate it for that initial flush of water in the morning!

Both matcha and green tea begin as the Camellia Sinensis plant. The main difference starts with how the plant is grown and processed. Matcha tea is shade grown and ground to a fine powder – you are essentially consuming whole tea leaves. The plant intended for green teas, on the other hand, is traditionally grown and harvested. Once harvested, the leaves are steamed to stop oxidation and then dried. The dried leaves are broken up for tea bags or carefully packaged as loose leaf tea, ready to steep. We source only the finest organic loose leaf grade tea leaves and then we cold brew them for up to 8 hours to extract all the beneficial compounds. Then, through a combination of pressure and dehydration at a low temperature, our Tea Crystals emerge. Cold Brew Crystallization preserves up to 12x the nutrient content compared to other tea.
Drinking any of our teas as an iced tea will not negate the benefits found in our teas! We do recommend not using water that is too hot, however. We recommend a maximum temperature of 170°F for green teas and 180°F for black and herbal teas.
Some of our teas are both hot and cold water soluble, and some are hot water soluble only. With that said, you can enjoy any of our teas as an iced tea! Just simply mix the Tea Crystals with an ounce or so of hot water (but not boiling!), then add ice and cold water as you'd like, and enjoy!
